The Elvis Brownie
I have a lot of friends that dont eat meat (but please dont hold that against them), and most of them are very nice, well adjusted people. Most. I had some bananas I wanted to use up, and I knew that they have many uses in baking, including replacing eggs and adding flavour. I put the word out and my new friend Angela, aka @thesmangela, shared with me this great recipe for Vegan Fudge Brownies. Of course, being the man I am I had to remove the vegan from this and make it meaty. When I went into my fridge for ingredients, and noticed some bacon that was calling to be used, the banana brownies turned into banana bacon brownies. Bacon, and banana....where else can I go with this? Keep in mind this whole decision process took but a split second, as my meaty mind is sharp and works quickly when Im developing flavour combos. Elvis was known for a sandwich that combined peanut butter, banana, and bacon, and was then fried. I am a fan of this sandwich, so I decided my brownie would be an hommage to the man.

Here is my recipe:
3/4 cup of unbleached flour
3/4 cup of red fife flour
1/2 cup of cocoa (don't cheap out, use the good stuff)
1 1/2 cups brown sugar
1 1/2 tsp baking soda
3/4 tsp baking powder
1 tsp salt
4 tbs banana pudding mix
3/4 cup brewed coffee
3/4 cup milk
1/3 cup peanut oil
1-2 mashed bananas
1 cup chopped peanuts
20 slices of cooked bacon, reserve fat
Preheat 350
Sift together dry and wet seperately, then combine mixing well
Add chopped bacon and nuts
Grease your 9x9 pan with some of the bacon fat
Bake for 45 minutes, or until a toothpick comes out clean
