I Hacked Alice Waters

I Hacked Alice Waters' Scones. I know, the horror and scandal of it all. 

Im at Vickis Veggies with my friend Rossy for a couple of days, and woke up craving scones. We had not eaten much of anything, so away I went to play around with this recipe that Vicki found for me. Love Alice, but had to make it my own.

Preheat to 400

Mix

  •             2 cups unbleached AP or pastry flour
  •             2.5 tsp baking powder
  •             .5 tsp salt
  •             .25 cup sugar

Stir in

  •             1.33 cups cream
  •             1 cup maple cheddar
  •             .5 cup scallions or chives

Mix until the dough just comes together, it will be sticky. Turn out onto a floured surface. Kneed until the dough holds together. Form into a flattened circle, and brush with bacon fat. Sprinkle sugar on the top, generously. Cut into 8 wedges, and place on parchment on a baking sheet 1 inch apart. Bake 17-20 minutes, until golden around the edges.

P.S. chopped dark chocolate as a sub for the cheese and chives would be nice, too.
