Strawberry Balsamic Jam
Sweet, savoury, and just plain delicious. This recipe I made a few weeks ago has such great flavours, I highly recommend trying it out. Combine the sweet and tart flavour of peaking strawberries, and add in some earthy flavour with cardamom, a little bite with some pepper, and there you have it...fire up the toaster!

- 1 pint of strawberries, cleaned, trimmed and chopped
- 5 tbs agave sugar
- 4-6 tbs balsamic
- 1 tsp fresh ground pepper, or pink berries (aka pink peppercorns).
- 1 tsp cardamom
Jams like this one are pretty simple, you just have to throw everything in a pot on medium heat and cook it down until it is all combined and reaches the desired consistency. Dont forget to stir once in a while to make sure the flavours combine thoroughly. You can adjust the pepper and cardamom according to your tastes, this base recipe will allow you to taste these components, but they wont over power. I like using the pink berries because of their mild flavour and colour, in this specific recipe. Enjoy!
