Sweet Onion Marmalade

 This idea came to me when Jessie from Sosnicki Organics posted that she was bringing sweet onions to market one Saturday recently. Yes! This is similar to a recipe I do for balsamic onion compote, where I use duck fat for richness. The sweet onions in this recipe add a different flavour, as does the bacon fat. Perfect on a grilled cheese with aged cheddar!

Sweet Onion Marmalade

3 tbs melted butter

3 tbs bacon fat

10 cups sweet onions (walla walla or similar variety), chopped

1.5 cups honey

2 cups brown sugar

2 cups white sugar

3 cups balsamic

1 cup port

3 tbs pepper

2 tbs salt

1 tbs smoked paprika

Splash of rice wine vinegar 

  • Cook 1 lb of bacon to render the fat, and set aside bacon, chop.
  • Add butter and onions to a large non stick pan with the bacon fat and cook the onions until they brown, on medium-high heat.
  • Add remainder of ingredients, except the vinegar, reduce to medium temperature and cook until viscous, string often so it does not burn.
  • Remove from heat and stir in the vinegar.
