Seafood Salad Devilled Eggs
Eggs, they do a body good? No, wait, that is milk. What do the Egg Farmers say, “Get stuffed”? No, that’s not it, but it does work with the theme of the day, Devilled Eggs. It is World Egg Month, and I was recruited along with some others to come up with some creative ideas for this one bite treat. What’s that, you don’t take it all in one bite? Amateur!

Devilled eggs are pretty classic, and have been making appearances at cocktail and dinner parties for decades. They are a personal favourite of mine, this is for sure. So, my kit arrived, and there were all sorts of inspirational ingredients in there. I have come up with a few ideas to try, but as it is All Hallows Eve, I wanted to share with you my devilish concoction, and a damn tasty one at that.
Recipe is below, but I wanted to include some fun facts that I found at eggfarmersontario.ca, and there is more fun stuff there too, you should have a visit.
- Hard cook extra eggs to have on hand for a great portable snack or in case one does not slice evenly. Refrigerate in a covered container up to 1 week.
- A long thin knife works great for slicing the eggs in half and before slicing the next egg wipe your blade clean.
- Cut a thin slice off the underside of each egg white so that the eggs wont tip over when filling or serving
- For the softest texture serve devilled eggs immediately or cover and refrigerate up to 8 hours
Seafood Salad Devilled Eggs with Bacon and Dill Garnish
- 12 hard boiled eggs, halved and the yolk saved for egg salad or just eat as a snack while you are working
- 2 cups cooked shrimp
- 1 small package of smoked salmon (85gr)
- ½ cup mayo
- 2-4 tablespoons of olive oil
- ¼ cup capers and some of the liquid
- 2 tbs paprika
- 2 tbs white pepper
- 1 tsp smoked salt
- 1 tbs lemon juice
- ½ cup chopped bacon
- Dill fronds for garnish
This is pretty simple, just blend everything up and fill the eggs with a piping bag. In lieu of that, just take a plastic bag and fill with the mix and snip off the tip. Like a circumcision! Hahah…oh boy.
